This dressing goes great with roasted vegetables and meat! Spicy and earthy with just a touch of richness, this is a super easy condiment to whip up.

2 bunches of chives
1 heaping tablespoon Mascarpone cheese
1/3 cup extra virgin olive oil
3 Thai Chili Peppers
Flaky sea salt and freshly ground pepper
Juice from 1 lemon
In a food processor, combine the chives, Mascarpone, extra virgin olive oil, Thai Chili peppers, lemon juice, and flaky sea salt. Pulse until smooth and well combined. Chill until ready to serve.
