Simple Breakfast Salad

There isn't much to this 'recipe' and you can mix and match as you like! This would make a beautiful breakfast for that special someone on Valentine's Day.

INGREDIENTS

2 small handfuls of tender greens

2 eggs

4 ounces of lardons (or, cut 4 pieces of bacon into small strips)

1 avocado

1 blood orange

Flaky sea salt and fresh cracked pepper

METHOD

Add the bacon to a skillet and bring to medium heat. Cook for 8-12 minutes or until crispy and browned. Remove from the pan.

Meanwhile, bring a small pot of water to a boil. Add the eggs and cook for exactly 7 minutes. Remove from the heat and immediately run cold water of the eggs to stop the cooking process. Carefully peel the eggs and cut them in half lengthwise. Season with a bit of flaky sea salt and a crack of pepper.

Cut the orange into quarters and cut the avocado intro strips or cubes. Divide the greens between plates and sprinkle with bacon. Serve with avocado, eggs, and orange wedges. Enjoy!
