Inspired by Our Trip to Europe
This isn't so much of a recipe as it is inspiration from our trip to Europe last year. One of the things I enjoyed most was going to the cafe for coffee and a little platter of small bites – cheese, jam, meats, and soft boiled eggs and always served with a small glass of fresh orange juice.
I'm going to keep this post pretty generic because really, you can add whatever you like to these plates.
We used RSVP International's adorable porcelain egg holders and spoons for a dish that was super cute and tasty!
Skill Level: Easy
Time to Make: 20 minutes
2 soft-boiled eggs
Tomato salad (cherry tomatoes, extra virgin olive oil, salt, pepper and a touch of lemon juice)
Greens (We used pea shoots, but you can use arugula or any other microgreen)
Thin sliced ham (Plain ham is best. Avoid overly sweet hams like maple)
Cheese (We used brie)
Fruit (We used Medjool dates and orange wedges)
Butter and/or jam
Prepare the soft-boiled eggs by boiling them for precisely seven minutes. Drain under cold water briefly and place them into the egg cups.
To Serve: Place the egg cup in the center of the plate and arrange your desired accoutrements around the egg. Serve with a salt and pepper shaker to allow guests to season their eggs. Enjoy!
