Tonight, I made a salad for dinner but for some reason, my husband was feeling extra hungry! I decided to use up the ingredients in my apartment (including some awesome pickled cherry tomatoes that my aunt made) into a really quick pasta after-dinner dinner!

Time to Make: 30 minutes
16 ounces pasta
2 tablespoons garlic butter (or use 2 cloves of garlic with 2 tablespoons butter)
1 pint pickled cherry tomatoes (or fresh cherry tomatoes)
1 cup reserved pasta cooking water
1/4 cup heavy cream
1 cup fresh spinach
1 bunch basil
Salt, pepper, and crushed red pepper to taste
Extra virgin olive oil, optional, for serving
Shaved parmesan cheese, optional, for serving
Prepare Ingredients: Bring a large pot of salted water to a boil. Drain off most of the liquid from the pickled cherry tomatoes (reserve the brine for another use). Rinse the basil leaves and tear them in half and set aside.
Cook the Pasta: Once the water is boiling, add the pasta and cook until al dente, about 13-16 minutes depending on the pasta you're using. Drain the pasta, reserving 1 cup of cooking water.
Make the Sauce: As the pasta is cooking, start the sauce. Heat the butter in the large pot until melted and frothy. Add the tomatoes and cook, breaking them apart with a fork as they soften. Pour in the reserved pasta cooking water along with the cream. Taste and season with salt, pepper, and crushed red pepper. Bring to a boil and reduce heat and simmer for 5-10 minutes or until the sauce is thickened a bit.
Stir in the spinach and torn basil leaves and cook until wilted. Stir in the pasta and toss to coat. Cook for an additional minute or two. Remove from heat.
To Serve: Divide the pasta between bowls and drizzle with a bit of extra virgin olive oil or parmesan cheese if desired. Finish with a crack of fresh black pepper. Enjoy!
