Easy Summer Cherry Salsa

I've been tempted by the huge selections of cherries every time I go to the grocery store, and today, I finally decided to buy a little bag. My grocery store also had some beautiful multi-colored cherry tomatoes, and I started imagining a sweet and tangy salsa served with my dinner!

This salsa can be used with pork, mild, white fish, or even served on avocado toast (you bet your bums I'll be serving this on my avocado toast tomorrow!)


Serves: 6, as a small accompaniment at dinner

2 cups fresh bing cherries

1/2 small red onion

1/2 lime

1 serrano, jalapeño, or other hot green pepper

1/4 cup fresh cilantro

2 scallions

4 cloves garlic

10 cherry tomatoes

Drizzle of extra virgin olive oil

Salt and pepper to taste


Prep Ingredients: Quarter the cherries and discard the pit. Quarter the tomatoes. Peel the red onion and garlic. Juice the lime. Trim the scallions.

Start the Salsa: In a food processor, combine the red onion, lime juice, the hot pepper, scallions, cilantro, and garlic and pulse until well puréed. Stir in the extra virgin olive oil and pulse again until well combined. Season with salt and pepper and transfer to a medium bowl. Add the cherries and tomatoes to the bowl and toss to coat. Taste and season with more salt, pepper, or extra virgin olive oil.

To Serve: Chill until ready to serve. Enjoy!
