This weekend involved a tremendous amount of cooking and I ended up with a lot of odds and ends in the refrigerator. I whipped up this simple salad with beautiful, spicy French breakfast radishes and a bit of dill.
Serves: 2-4, as a small side salad
Skill Level: Easy
Time to Make: 10 minutes
8-10 radishes (French breakfast or red)
Thinly sliced red onion, to taste
A few sprigs of fresh dill
1 tablespoon extra virgin olive oil
Shaved ricotta salata, to taste
Flaky sea salt and fresh cracked pepper
Prepare Ingredients: Scrub and trim the radishes and slice lengthwise. Pick the dill from the stems and discard the stems.
Make the Salad: In a small bowl, combine the radishes, sliced red onion, and dill sprigs. Drizzle with the olive oil and season with the salt and pepper. Toss to coat. Arrange a few pieces of shaved ricotta salata on top and chill until ready to serve.
To Serve: Serve with additional extra virgin olive oil, shaved ricotta salata, or fresh cracked pepper at the table. Enjoy!
