Tonight, I decided I wanted a big salad and as I was walking around the grocery store, I saw that salmon was on sale. I decided to combine some pretty classic items – salmon, horseradish, tomatoes, and red onion into a deliciously perfect salad. The dressing inspiration came from Food52, but I did a few things a little differently.
Serves: 8, as a salad dressing
Skill Level: Easy
Time to Make: 10 minutes
3 tablespoons prepared horseradish
1-2 tablespoons honey, depending on how sweet you like it
2 tablespoons creme fraîche
3 tablespoons heavy cream
2 tablespoons whole grain dijon mustard
Salt to taste
Prepare Ingredients: Zest the lemon and juice half of it.
Prepare the Dressing: Combine all ingredients in a food processor and pulse until smooth. Add additional heavy cream if you'd like the dressing to be thinner. Taste and season with additional salt, honey, mustard, or horseradish depending on your preference. Keep chilled in an airtight container. Enjoy!
